100% Iberian acorn-fed ham shoulder

Despite the eternal comparison with ham, at Quinta-R we believe that 100% Iberian acorn-fed shoulder ham has enough characteristics and nuances to be sold as a unique product with its own identity.

Iberian shoulder ham comes from the front limbs of our purebred pigs, and we prepare it using an artisan and traditional process in which curing is done only with salt, without any preservatives. Just as our great-great-grandparents did.

The main function of salting is the preservation of the piece, and it is fundamental, since it is the only preservative that our shoulder hams contain.

After about 10 days in salt, the shoulder hams are washed and hung in a refrigerated chamber for one month. And after this procedure, they will remain curing for at least 2 years in a natural drying room, thanks to the incredible microclimate offered by the Sierra de Aracena.
