Just as our great-great-grandparents did.\u003c\/p\u003e\n\u003cp class=\"preFade fadeIn\"\u003eThe main function of salting is the preservation of the piece, and it is fundamental, since it is the only preservative that our shoulder hams contain.\u003c\/p\u003e\n\u003cp class=\"preFade fadeIn\"\u003eAfter about 10 days in salt, the shoulder hams are washed and hung in a refrigerated chamber for one month.
